The olives grown on our farm are located between 100 and 800 meters above sea level. They are harvested exclusively by manual beating and milled within 24 hours of harvesting, cold-worked at a temperature below 27 degrees. The oil obtained has an acidity of less than 0.5%, is rich in polyphenols and has a very low percentage of peroxides.
